My family and many good friends will be with me around the table. I have so much to be thankful for this year.
This leftover turkey recipe compliments of good writing friend Nina Bruhns: Use equal parts turkey, refried beans, shredded cheddar cheese, and rice (optional) to make filling for chimichangas. Put a portion of filling in flour tortilla, then wrap like a package and secure with cooking twine. Use deep fryer or fry in oil in pan until golden; serve with sour cream, salsa, olives, cilantro, etc. What I love about this recipe is I usually pass it off to the men and the kids to do in an assembly line, and they enjoy it!

I had some leftover turkey last week and made a turkey pot pie that turned out pretty awesome. And it was super easy – especially since I used pre-made crusts, jarred gravy and frozen stew veggies. =o)

I roast a small turkey breast and my family goes straight for their favorite part of Thanksgiving — turkey sandwiches, pumpkin pie, and football. We haven’t had leftovers in years.

I always, always, always cook too much food. I could feed two families of seven, but it’s usually just my family and my mom, and sometimes friends.
